I feel like a pilgrim!

Today has been a very busy day. My husband had a follow-up appointment with his doctor so the girls and I dropped him off and then headed to Trader Joe’s. This week I felt more prepared and in control of what I was buying and I was not limited to a time frame. I took my time, even with my gorgeous teenager complaining…lol. I only went over our budget by $8 and that was spent on “Kind” bars for our trip next week. I would rather eat one of them than pick up a candy bar on the road. I also stopped by the farmers market and picked up some fresh local fruits and veggies. I also purchased some avocado oil and it is my new favorite oil.

Once we got back to the house I cleaned out my fridge and pantry from some lingering yucky foods. Now when I walk in my pantry or open my fridge I want to sing “AHHHHHHH” because I am so happy and feel so blessed by God to be able to purchase these healthy clean foods for my family.

It is alot of work, but they are so worth it, and it is my job to love them and take care of them. I know in time as I lose weight it will be easier for me to be on my feet for long periods of time. From what I have read it takes about two full weeks to completely withdraw from sugar, so I figure this time next week I should have more energy.

I am definitely feeling like a pilgrim…lol! Today, I made 2-loaves of whole wheat bread for this week as well as whole wheat buns for sloppy Joe’s and veggie burgers next week. I also made some garlic and cilantro hummus for veggies and whole wheat pita’s, as well as shredded all the blocks of cheese I bought today. For dinner I made whole wheat mac n cheese with bacon and peas. This is the first time I have ever made my own cheese sauce. It was simply delicious. The only adjustment to the recipe I made was adding cream. I also made some cucumber mint spring water for us to drink. My son hasn’t noticed yet…hehe.

Overall today was a great day and I got alot accomplished. Thursday and Friday I plan on cooking and freezing meals for my kids to have next week while we are in Vegas. This is our first trip to Vegas so if you have any tips for us or things for us to see let me know. We do have tickets to see David Copperfield and I am super excited about that.
